Culinary Arts students showcase skills in MRE Challenge

The kitchen at the HFM Career and Technical Education Center was buzzing with excitement recently as our Culinary Arts students put their skills to the ultimate test during an unforgettable MRE Chopped Challenge with help from the New York Army National Guard.

Inspired by the popular television show ‘Chopped’, junior and senior culinary students were challenged to think fast, work as a team, and get creative under pressure. The twist? Instead of a basket of fresh ingredients, students were given military MREs (Meals Ready‑to‑Eat) which are designed for soldiers in combat or where food service isn’t available.

Working in small teams, students had just a few minutes to review their assigned MREs and collaborate on how to transform them into delightful dishes. Once the clock started, it was all hands-on deck. Teams had 45 minutes to create and plate an appetizer, entrée, and dessert. To keep things interesting, the judges threw in a secret ingredient that everyone had to incorporate…an egg!

“I am incredibly proud of how our students rose to this challenge,” said Tracey Buley, an instructor in the Culinary Arts program. “They demonstrated creativity, teamwork, and the ability to adapt under pressure.”

The results were nothing short of impressive.

One team took a chicken and vegetable MRE and elevated it into a chicken pot pie, complete with a homemade crust. For dessert, they turned soft tortillas into deep‑fried cannoli shells which were then piped with a sweetened cream cheese filling, chocolate morsels, and finished with a dusting of cinnamon sugar.

Honey mustard pretzels were finely crushed and used as a crunchy coating for deep‑fried cheese sticks. A meatball and marinara MRE was turned into a comforting grilled cheese sandwich.

Other MREs transformed during the challenge included a pork sausage patty, chili and macaroni, and cheese tortellini, each reimagined into appetizing dishes.

Students were judged on taste, presentation, creativity, and teamwork, and every group rose to the occasion.
