HFM
class project satisfies sweet tooth
Foundations of Food Service students create mountain of
cannoli for annual fundraiser
Say
“cannoli” and the ears perk up for anyone with a sweet tooth.
Those tube-shaped Italian pasties stuffed with sweet, creamy
filling get the mouth to watering and the debate started. “The
best cannolo I ever tasted was…”
HFM
BOCES Foundations of Food Services class satisfied hundreds of
hungry mouths as students filled and packaged more than 5,000 cannoli as part of their annual fundraising project. The money
raised will fund the class graduation ceremony as well as
provide two scholarships awarded by the Career and Technical
Education Center this year.
Instructor Everett “Cubby” Faville created an assembly
line of students to fill stacks of white boxes loaded with more
than 450 dozen, sugar-dusted, chocolate chip-laced pastries.
The
furious production continued for four days as the students
pushed to fulfill the orders. As kitchen storage space grew
scarce, students spread out through the HFM BOCES building to
deliver boxes marked with a big “thank you” to expectant and
happy customers.
“It
is a tremendous amount of work,” Mr. Faville said. “But it is
also very gratifying for the kids to accomplish so much through
their own hard work.”
Students
in the Foundations of Food Services program learn basic,
entry-level skills ideal for the fast-food industry,
institutional and supermarket settings. Students receive
classroom instruction and hands-on-training that prepare them
for employment.
Students
explore career opportunities and develop inter-personal skills
and other world-of-work habits essential for success on the job.
Second-year students learn more advanced baking and food
preparation techniques and have work-study opportunities.
"This
project is a real test for everyone," Mr. Faville said. "But
this is a hard-working crew." |
